Eating vegan is easy in Albuquerque

I moved to New Mexico because of the legal cannabis laws.

I didn’t know anything about the climate or the people or the politics when I decided to move, but I knew that cannabis was legal.

I already spent six months in jail for possession of marijuana supplies. When I found out that 3 hours away from me, New Mexico has legal cannabis, I was ready to pack a bag and move. Coming to Albuquerque has been one of the best decisions of my life. I love living in Albuquerque and I found a job working at a cannabis dispensary. I work 5 days a week and sometimes I get a few hours of overtime. I get a great deal on all of my marijuana supplies. Eating vegan is easy in Albuquerque, and it was not easy before I moved. Albuquerque has a ton of vegan and vegetarian friendly restaurants, like Cafe Lush. Cafe Lush is one of my favorite places to eat. It opened about 10 years ago and offers fresh and healthy food. Cafe Lush is right on a street corner and has an interesting look and architectural feel.One of my favorite sandwiches at this restaurant is a veggie wrap with sauteed organic tofu, spinach, yams, and avocado spread. It has a lot of subtle flavors, but they all come together for a flavorful act punch. I’m looking forward to next month when my mom comes to visit, because I want to take her to the cafe for some deli sandwiches. I know she will like the food, too.
